Pina Colada Salad

No, my sister couldn't make this dish the way she saw it made in the Caribbean. She was simply not willing to buy a bottle of dressing and dump it in the cole slaw.  She had inspiration to add a hint of tropical flavor when she created Pina Colada Salad.  When she is not in Belize, she uses a small can of crushed pineapple.  However, Belize has the best pineapples in the world.  Sometimes, she just slices them up for dessert.  Again, when she is not in Belize, she uses pina colada mix from a bottle.  But, if you'd rather make your own, you can use cream of coconut, fresh pineapple, and pineapple juice.  It's just so much easier out of a bottle

Phyllis' Pina Colada Salad
San Pedro, Ambergris Caye, Belize

Ingredients
1 med. cabbage, shredded
1 carrot, peeled, shredded
1 can crushed pineapple
1/2 cup mayonnaise
1/2 cup pina colada mi
1 Tbs apple cider vinegar
2 Tbs sugar
1 to 2 Tbs of spiced rum
      
Mix together the cabbage, carrot, and pineapple.  Stir together the dressing with mayonnaise, pina colada mix, vinegar, and sugar.  Splash in the spiced rum to taste, a little or a lot, or a lot more.

Stir the dressing into the cabbage, carrots, and pineapple.  Let it chill in the refrigerator while you chill with a pina colada of your own.

Serves 4 to 6.
