Phyllis' Pineapple Dressing
My sister no longer buys salad dressing
that is already made for customers at the grocery store. Once she
learned how to do it by herself, and do it so very well, she can't go
back to anything less than delicious. In Belize, Phyllis freezes her
fruit because they ripen so fast. She uses the frozen chunks in
smoothies, salad dressing, barbecue sauces and pina coladas. They always
taste better with honey, but that's optional for those who live with
more or less sweetness in their lives.

Pineapple Dressing
San Pedro, Ambergris Caye, Belize

Ingredients:
½ cup olive oil 4 chunks fresh pineapple |
1 Tbs apple cider
vinegar 1 clove garlic ¼ cup honey (optional) |
Toss it all together and mix it up with your immersion blender. And, for a delicious Banana alternative, substitute 1/2 banana for the pineapple.
